There's nothing better that then smell of burning coals and BBQ's during the summer

Gone are the days of the charred sausages and blackened burgers! With BBQ’s these days it’s all about using fresh ingredients and having fun with flavours!

Here are three of our Chef’s favourite dishes to cook over hot coals.


Richie’s BBQ Prawns


Kaffir lime leaves
King Prawns – shells on

Blend the lemongrass, garlic, lime leaves and krachai  with plenty of salt and pepper in a mortar and pestle with a slug of rapeseed oil. Marinade the prawns in mixture for at least an hour before BBQ’ing.

Simple, Easy, Delicious!




Danny’s Charcoal Steak

Some call it dirty steak and others call it steak on the coals but whatever the name this recipe is simple and destined to impress!

Cooking directly on the coals gives the meat a delightful smokey, charred flavour, crisping the fat on the steak and sealing in all of the juices. Don’t be afraid, very little of the ash sticks to the steak and what does can be brushed of.

Pick your favourite rub or keep it classic by drizzling the steak with a little oil and lots of salt and pepper! Danny recommends choosing a cut on the bone such as sirloin or even a tomahawk! Make sure you allow the meat to come to room temperature before putting on the coals.

Follow the same cooking times you would when cooking in a skillet and then allow to rest for 5 minutes before serving!

Arthur’s Honey and Ginger Chicken Wings


24 chicken wings or thighs
1 fresh red chili – finely diced
5 tbs runny honey
2 tbs soy sauce
2 cm piece of ginger – grated


This recipe is as easy as one, two three!


In a bowl combine the soy, honey, chili and ginger. Marinade the chicken in the mixture for 24 hours.

Cook the wings on a hot BBQ for 15 to 20 minutes, or until dark and the juices run clear, turning often.
